Overview
Streptococcus thermophilus is a thermophilic lactic acid bacterium and, with Lactobacillus bulgaricus, one of the two classic yoghurt starter cultures. It is also widely used in cheese making.
It ferments lactose rapidly to lactic acid, lowering pH and building the texture and flavour of yoghurt and cheese. Its beta-galactosidase (lactase) activity reduces the lactose content of fermented dairy products.
It is also used in probiotic blends for dietary supplements and functional foods.
